One of the blogs I subscribe to is Simply Recipes and every day or so I get an e-mail with a new post. This was todays post…meatballs with ricotta cheese and tomato sauce. God, doesn’t that look delicious….excuse me while I run to the kitchen… I’ll be right back….
….okay I’m back. See that didn’t take mmmchewcrunchchew… long… chewcrunchmmm at all. Pardon me for blogging with my mouth full but I was so hungry after looking at that e-mail. I love, love Italian food … oh why … WHY… doesn’t it love me back. It’s like a bad boyfriend… looks good (as you can see) … smells great (trust me, it does) … makes me feel like my heart is broken (heartburn) …gives me an upset stomach (gas) … lies to me (says it’s low fat and low calorie, and also diabetic friendly) and it never calls me. I really have to un-subscribe to that blog.

I would never claim this was low fat or low carb.
But it sure is good!
So good that on the 2rd day of leftovers there was half a meatball left and we saved it. I ate it during lunch. Half a meatball. Totally worth saving.
But the meatball whispered to me that I could trust him about being low fat….or maybe it was just my low blood sugar talking.
